TWD: Banana-Coconut Ice Cream Pie

A crust of coconut, butter, and shortbread cookie crumbs. A filling of chocolate ice cream, banana, and rum. A few (optional) rum-soaked raisins. Banana-coconut ice cream pie.

Banana-Coconut Ice Cream Pie

Banana-Coconut Ice Cream Pie

What I did:

  • I made half the recipe and used two 4.5″ springform pans.
  • I skipped the layer of banana slices and the banana garnish.
  • I mixed some rum-soaked raisins into one of the mini pies.
  • I used Edy’s low-fat chocolate ice cream.

How it went: The crust was so interesting to make. Melted butter, lots of coconut, and a small amount of shortbread cookie crumbs (I used Lorna Doone). This is no crust like I’ve ever made, but it worked and it was great! I made the ice cream filling the next day; this was quick and easy to put together.

How it tasted: The crust is awesome! The filling is really good! The rum-soaked raisins were for my serving and for this raisin fanatic, they were the crowning touch on this pie. I mixed the banana into the ice cream but skipped the layer of banana slices; it still had a nice banana flavor. My husband declared this a “fun” dessert and especially liked how the texture of the coconut crust worked with the ice cream filling. This was a hit!
