Tuesdays w/Dorie: Espresso-Chocolate Shortbread

This week’s recipe for the Tuesdays with Dorie bakers is Espresso-Chocolate Shortbread Cookies. My favorite things together in my favorite delivery mechanism…a cookie! Thanks go to Donna of Life’s Too Short Not to East Dessert First for this selection (great blog name too, Donna!).


What I did: I cut the recipe in half and used mini chocolate chips (the recipe says to use either finely chopped chocolate or mini chips).

How it went: So easy to mix up. I made the dough one evening and baked them the next day. To make it even easier, instead of rolling out the dough, I formed it into a log (which was kind of a square log) and sliced the cookies off for baking. I got this idea from the P&Q post.  For those who don’t know, the P&Q is where the TWD bakers can make comments and ask/answer questions about the current week’s recipe. It’s very helpful!

How it tasted: I liked these, but thought the coffee flavor was a bit overpowering. My husband described them as “sophisticated” and liked them even though he’s not a coffee drinker. He thought they’d be good with vanilla ice cream and I think he’s right. Too bad we didn’t have any; however, I only baked half of the cookies, so I’ll save the rest of the dough and bake more cookies to go with some ice cream later!

  1. They were a big, big hit here! You are so clever to think of posing them in the little cup like this…so perfect. I just dumped them all in a pie plate and took a photo really quick as the guys were in them and I wasn’t sure I was even going to get a photo. Also forgot those little holes until the last batch. Really…this group is way beyond me most of the time, but I am trying!!! Are you doing MKMW this month?


  2. Love your pink cup! I was with you – the coffee flavour wasn’t for me, but I may make them agan with a different flavour.

  6. Looks like the square log idea worked perfectly. I love coffee and chocolate too but somehow I think plain shortbread is better.


  7. I used hazelnut flavoring instead of espresso (I don’t “do” coffee). These were really good, I thought.
    I LOVE your wicker background and that pink mug!

  9. Cookies are just about my favorite dessert, and though I don’t drink coffee I like the taste of it. I think these sound really good!
