Salted Butter Caramel Ice Cream

I made this Salted Butter Caramel Ice Cream for my husband’s birthday, but don’t wait for a special occasion to make it. It’s so good!

You can’t find the recipe in The Perfect Scoop, but you can find it here on David Lebovitz’s website. In his post, he explains why he didn’t put it in the book. Really David, you thought that Parsley Ice Cream was more important than this? I admit I haven’t tried the Parsley Ice Cream, but I don’t see how it could compete.

I made a couple of changes to the recipe:

  • I used all whole milk instead of whole milk and cream. I know it changes the texture, but this was still smooth and creamy and I prefer to trim out some fat calories this way.
  • Instead of the caramel praline mix-in, I used 1/2 cup of these, which are pretty darn good.

I’m sure if David Lebovitz read this, he’d be saying really, Jill, couldn’t you stick to the recipe?

We loved this! It got a lot of “this is so good” comments from my husband. Two thumbs up (and a paw up from the dog who loves to lick the bowl).

    Although caramel isn’t my favorite, I can tell this was a big hit with you two. I wonder if my kids would like it – considering caramel is one of Alexander’s favorites (Twix bars, anyone?)


  2. Isn’t it incredible? I found it to be labor intensive, but I did make the praline from scratch – slightly interesting experience, considering I’d never melted down sugar before. It was so worth it tho…


  3. Jill-I recently went over to Aileen’s (Pharmafoodie) house for our local book group and she fed me some of this (I think it was the same recipe). O.M.G.!!!!! Hands down, one of the best ice creams I’ve EVER had!!!! Yours looks deliciously creamy and wonderful! YUMMMMM!!!!!!

    Heath would be a fabulous addition-and I’m with Megan, Twix would be over the moon for caramel lovers like moi!

  7. Yum! I’ve made this one before and it’s delicious! Heath bits a perfect addition. With a flavorful ice cream like this one, I think using whole milk is a great idea.


  8. Jill, this looks devine! I can’t say that I would ever make parsley icecream, but this – oh yes!! I love your substitutions, and it’s good to know it works with whole milk, because the guilt factor with cream plays heavily on my mind.
