Graham Crackers

I never thought I’d be that person who makes graham crackers just so I can crush them up into crumbs. But that’s what I did today, so now I am officially “that person.” I didn’t need that many crumbs, so I thought well, I could have most of a box of store-bought grahams left over or I could have most of a batch of homemade grahams left over. Homemade won, of course.

It was a sweet victory. Crisp, delicious, with just a touch of cinnamon. I didn’t feel bad crushing some of them into crumbs; there were plenty left for munching.

The recipe is from Retro Desserts by Wayne Harley Brachman. I have the book, but you can find the recipe here on the Food Network site (it’s part of a S’Mores recipe; scroll down a little for the graham crackers). I bought the book years ago after seeing Brachman on Gale Gand’s TV show Sweet Dreams. It’s a fun book to read but I haven’t baked much from it. Now that I’ve pulled it off the shelf, I’ll have to stop reading and start baking!

Recipe notes

  • I made one change to the recipe. I have a bag of graham flour, and darn it, I was going to use that for my graham crackers! The recipe calls for 1 1/2 cups of whole wheat flour and 1/4 cup of rye flour; I substituted 1 3/4 cups graham flour.
  • I used a 2″ square cutter, but you can cut them into any shape you want using a cookie cutter or a knife.
  • I didn’t try it, but these might be good with some sugar or cinnamon sugar sprinkled on top before baking.
